Be careful with packaged sauces as many have added thickeners with gluten. This lovely gluten free sauce is made in minutes and can be stored in an airtight container in the fridge for several weeks.
Grind the kudzu to a fine powder.
In a small pan gently heat the tamari and maple syrup together. Mix the kudzu with enough water to make a smooth paste then add to the pan. Stir continuously until the sauce thickens. Set aside to cool and store in an airtight jar in the refrigerator.
Note: Kudzu is a white chalk like substance used extensively is Japanese cooking to thicken sauces. It's said to help regulate the acid / alkaline balance in the body.
