Free Healthy Recipe - Goat's milk yoghurt

Dairy free, Gluten free, Low fat, Wheat Free

I was telling a group of friends that I'd just made yoghurt. The reaction was "why bother?" Why? Because it's fun and much cheaper than buying it. The average cost of a cup of goat's yoghurt is $4.50 compared to making your own for between 50c - $1. With 2 people drinking a cup a day it can make a difference of up to $1,456 a year! You can either use goat's milk or reconstituted goat's milk powder. (If you use goat's milk powder, stir 100g goat's milk powder slowly into 1 litre of water until smooth)

Ingredients
1 litre goat's milk
3 tbsp goat's yoghurt
Method

Heat the milk to boil then remove the pan from the heat to cool to 38 degrees Celcius. Stir 3 tbs goat's yoghurt into the milk and fill a wide mouth thermos. Leave overnight. The yoghurt will be runnier than cow's milk.

Note: Yoghurt is made from fermenting lactic acid in milk. The addition of other cultures, specifically Lactobacillus acidophilus and Bifidobacterium bifidum, known as probiotic bacteria, help restore the gastrointestinal tract with healthy bacteria necessary for complete digestion.
