It may seem like a lot of work to make crackers when you can buy them so cheaply at the supermarket, but you'll be glad of the effort once you taste them. They make a much healthier snack than potato chips and delicious served with hummus or cheese.
Preheat the oven to 180 degrees Celsius.
In the food processor and using the dough blade, add the flours, sesame seeds, salt sunflower oil and tamari. With the motor running slowly add the water until it forms a dough ball.
Divide the dough in half and roll the first half out until the dough is approx 2mm thick. Cut into squares and transfer onto a lined baking sheet. Repeat the process with the second ball of dough.
Sprinkle a little seasalt over the crackers and bake in the oven for 15 - 20 minutes until golden.
Note : Some commercial crackers are made with hydrolysed fats which can have the effect of raising LDL cholesterol levels (bad cholesterol) and lowering HDL cholesterols levels (good cholesterol).
Makes 30 servings (serve = 1 cracker)
