Here's a lovely way to slip some extra vegetables into your children. The zucchini in the loaf makes it deliciously moist, and it will stay moist over a few days.
It's a great snack to serve when the kids get home from school.
Pre heat the oven to 180 degrees Celsius.
In one bowl combine the flour, baking powder, spices, salt, raisin and walnuts. In another bowl mix the oil, orange juice, honey, egg and zucchini. Combine the wet ingredients through the dry until well combined. Bake in a lined loaf tin for 35 - 40 minutes. Turn the loaf out onto a wire rack and allow to cool.
Note: Sunflower provides more vitamin E than any other vegetable oil. It is a combination on monounsaturated and polyunsaturated fats and has a light taste making it perfect for baking.
