Try and make this dish a few hours in advance of eating to allow the vinegar to 'cook' the onion and tomato.
Warm the vinegar in a small pan. Add the rice syrup and heat until it thoroughly melts through. Combine the onion , tomato, and coriander in a bowl and pour over the vinegar.
Note: Salsa makes a perfect accompaniment to red meat. The acid from the vinegar helps to break down the fibre in the meat making it more digestible.
