Served with hummus and wholegrain sourdough or oatcakes, this salad makes an easy weekend lunch or light dinner.
Steam the broccoli for 2 - 3 minutes then rinse it under cold running water.
Combine the steamed greens with the watercress and dress with ½ cup berry dressing.
Sprinkle the cashews over the top and serve.
Note : Watercress is a diuretic and useful food to eat for fluid retention. Try increasing your intake of watercress after a long haul flight.
