For those of you sworn off dairy you may enjoy this non dairy cream alternative. It's important (particularly for those with coeliac disease) to source soy milk with no added sugar, maltodextrin, barley or corn oil. Malt used to sweeten soy contains gluten.
Store covered in the fridge and use within 5 - 7 days.
Combine 2 cups soymilk in a saucepan with the agar agar flakes. Bring to the boil, stirring constantly until flakes have dissolved. Add a pinch of sea salt and cinnamon.
Pour into a dish and set.
Once set, cut into small pieces and place into a blender with maple syrup and 1 cup soymilk.
Puree until creamy.
Serve over Hot Fruit Compote.
