A delicious, light dessert that the whole family can enjoy - dairy sensitive or not. Serve with a few chopped walnuts sprinkled on top and if you aren't sensitive to dairy, a little plain yoghurt.
Preheat the oven to 170 degrees Celsius (150C fan forced).
Place the pears, rice milk and lemon strips into a small baking dish.
Sprinkle the pears with cinnamon and bake for 1 hour and 20 minutes or until the pears are just tender and the sauce has reduced to a light creamy
consistency. Turn the pears during cooking to coat in the syrup.
Stir in the lemon juice before serving.
Tip: The sauce will thicken upon standing for a creamier consistency.
