An easy and extremely healthy side dish, Brussels sprouts are full of fibre, Vitamin C, B vitamins and Vitamin K. Add an extra splash of olive oil after cooking for a more intense flavour.
Preheat oven to 200 degrees Celsius.
Slice sprouts in half lengthways and remove loose outer leaves. Trim the bottom stems.
Toss sprouts in olive oil, umeboshi vinegar and cracked pepper. Arrange on a baking sheet or tray and bake for 20-30 minutes, stirring occasionally to ensure even cooking.
Stir through pine nuts and serve.
