This is another recipe for the lazies as there's very little work involved. Everything is tossed together and cooked in a bag retaining the flavours in the delicious fresh and clean dish.
Preheat the oven to 180 degrees Celsius.
Brush the mushrooms and place them in a large bowl with the seafood. Using your hands combine the lime zest, lime juice and olive oil and toss around to make sure all the pieces are evenly coated. Add the thyme, limes and asparagus.
Open a roasting bag and sprinkle 1 tbs spelt flour into the bag, shaking it around to evenly coat the bag.
Fill the bag with the seafood mix and secure it with the attached ties
Make a few small holes in the top of the bag to prevent it bursting then place on a baking sheet in the oven to bake for 20 minutes.
Serve with wholemeal pasta and steamed spinach.
Note: Oven Bags are available from the supermarket and are made from a heat resistant material up to 200C. Always use them in an oven set at a moderate temperature.
