It's hardly a recipe but it is something that everyone should know how to be able to pull out and make in minutes - using the most fragrant tomatoes, snow white buffalo mozzarella, seasoning and a drizzle of the best quality olive oil, cooking has never been easier nor has healthy eating been so delicious.
Slice the tomatoes approximately 1cm thick and arrange them on a platter. Drain and slice the buffalo mozzarella and lay them over the tomatoes. Drizzle the olive oil over the platter and season.
Top with shredded basil and serve immediately.
Note: An Italian study found that there was over 40% more essential fatty acids in buffalo mozzarella than in regular cow's mozzarella. It also contained more antioxidants vitamin E and betacarotene.
