I blatantly stole this recipe from a friend who came to stay - we were combining efforts to prepare a casual spread for a group of friends and she whipped up this little number. Combined with a grainy sourdough, hummus or the chickpea and avocado dip (see recipe list) it's delicious. Studies have shown that beetroot can help reduce the risk of many cancers and may be beneficial in reducing LDL cholesterol.
Grate the beetroot and apple on the thickest setting, and mix them together with the lemon juice and black pepper.
Tip: Wear gloves to protect the hands from the beetroot.
