With the cupboards all but bare you can whip up this easy mid week meal for one - but do remember to serve this meal with an extra side of salad to ensure you meet your 5 serves of vegetables a day regime.
Bring a large pan of slightly salted water to the boil and add the pasta to cook for approx 15 minutes.
In a frying pan heat the olive oil and add the leeks, capers and sage leaves to sauté for approx 5 minutes.
Once the leek is soft and the pasta is cooked and drained, remove the pan from the heat. Toss the salmon through the pasta with the leek and caper sauce and season with cracked black pepper.
Serve with a side salad.
