Here's a very simple salad to serve as an accompaniment to the main meal, or as a light palate cleansing entrée. As an entrée it will serve to stimulate the digestive juices in preparation for the main course.
Wash and dry the rocket greens.
In a small bowl combine the fennel and pears
Combine the olive oil, lemon juice and fennel leaves.
Toss half the dressing through the rocket
Arrange the greens on individual plates with the fennel and pear on top.
Drizzle a little of the extra dressing over each.
Season with cracked black pepper and a little sea salt.
Note: Corella pears were named after the colourful Australian corella parrot. They are a cousin to the Fuji apple.
