Free Healthy Recipe - Crumbed Chicken with Pinenuts and Sage

Dairy free, Low carbohydrate, Low GI

Using the spare crumbs from the trout dish above you can create this lovely dish with organic chicken breasts. The good fat from the pinenuts is all the fat you need to crisp up this crumbed topping.

4 organic chicken breasts (approx 160 grams each)
¼ cup pine nuts, dry roasted
1 tbsp fresh sage, finely chopped
½ cup sourdough breadcrumbs, browned

Cut scores across the thickest sections of the chicken. Sear each side of the chicken for 2 - 3 minutes each side.
In a food processor combine the pinenuts, sage, preserved lemon and breadcrumbs.

Lay the chicken pieces onto oiled baking pan and spoon the crumb mixture over the chicken, pressing it into it's flesh. Bake in the oven for a further 10 - 15 minutes, turning the tray around regularly to ensure the crust doesn't burn.

Serve with steamed beans.
