Beetroot contains anti-inflammatory nutrients including Vitamin C, folate, selenium and betacarotene. It's also a good source of fibre, magnesium and potassium.
Boiled or baked beetroot on its own can taste a little earthy. Combined with apple and vinegar in a relish, it's delicious. With its strong flavour this relish is delicious with game meat or a strong flavoured cheese such as fetta. Serve it warm or cold.
Note: The relish will refrigerate for up to 1 month.
Place all the ingredients in a heavy based pan and slowly bring to the boil. Reduce to simmer, cover and cook for approx 45 minutes until the liquid has absorbed and the ingredients are soft and pulpy.
Set aside to cool before transferring to a sterilised storage jar.
Refrigerate.
Note: To sterilise glass jars, wash thoroughly in hot soapy water and rinse thoroughly. Place the jars on a baking tray in the over preheated to 120°C for 20 minutes.
