I served this dish at a dinner party, and was met with resounding praise. Little did my guests know that night I was a reluctant host with very little time to prepare and literally started cooking when they were enjoying pre dinner drinks in the next room.
This recipe serves four but, with some simple maths, can easily be modified to suit any number.
If you can't find snapper, use any other thick fleshy white fillet.
Preheat the oven to 180 degrees Celsius.
Wipe the fish fillets and brush with olive oil and lemon juice. Slice the mushrooms and place in an oven proof dish. Combine the remaining ingredients in a small bowl and pour over the mushrooms.
Place the mushrooms in the oven to cook for 10 minutes. Heat a grill pan and sear the fish for 2 - 3 minutes each side.
Remove the fish and place on top of the mushrooms. Cover with foil and cook for a further 10 - 12 minutes.
Note: To keep mushrooms fresh, store in paper bags. In plastic they will sweat and deteriorate quickly.
