The flavour of grain and fruit is subtly altered with spices and rosewater in this Middle eastern variation of Bircher muesli. With papaya to aid digestion and inhibit detrimental bacteria in the gut, cherries for antioxidants, kiwi for an extra boost of vitamin C, flaxseed oil to boost energy and Omega 3, wholegrains to ease nervous tension and sheep's yoghurt because it's kinder on the gut; it's a delicious tasting tonic everyone will enjoy.
Combine the rose water, maple syrup, cardamom and cinnamon over the grain and walnuts. Roast in a baking tray for approx 20 minutes, turning the grain periodically so it doesn't burn.
Remove from the oven and set aside to cool.
In a bowl combine the cherries and kiwi fruit together. Using a cheese grater on the widest setting grate the papaya and add it to the rest of the fruit with the lime juice.
In 4 separate glass dishes, spoon a layer of fruit in each.
Next add a layer of the grain and drizzle 1 tbs flax seed oil in each.
Top with another layer of fruit and finish with a layer of sheep's yoghurt.
Leave overnight in the refrigerator.
Serve with a few cherries on top.
Note: 250 grams of cherries a day can help alleviate conditions of gout by lowering levels of uric acid levels.
