If you make this dessert in a large round bowl and turn it out upside down it resembles an igloo with berries in it.
Wash and mix the berries together.
Fill 4 glass dessert bowl with the berries. In a small pan gently heat the coconut milk with the lime juice and maple syrup until it's almost boiling. Add the agar agar and stir continuously until it's completely dissolved. Remove from the heat and continue stirring while it cools slightly. Pour the coconut jelly over the berries. Top with a sprinkle of coconut shavings and refrigerate before serving.
Note: Maple syrup is a lower GI than sugar and is a good source of zinc. Always but 100% pure maple syrup, available from health food stores and supermarkets.
