Red cabbage and cranberries for a multitude of antioxidants and spices to boost the metabolism and aid digestion makes this variation on a traditional German dish the perfect accompaniment to Christmas dinner.
Heat the oil in a heavy based pan. Add the onion and garlic and sauté for 2 minutes. Add the spices and cabbage, vinegar and apple concentrate and stir through.
Reduce the heat to low and cover the pan. Cook for 20 minutes. Add the cranberries, stir through and cook for a further 15 minutes.
