This is a recipe I created after repeatedly spending over 10 dollars for a small jar of a delicious commercial brand. It costs the same t0 make almost almost five times the amount and the process is ridiculously easy. The longer you leave it the nicer it gets.
Wash thoroughly and sterilize 2 large jars with secure lids.
Set aside a couple of the large outer leaves of the cabbage. Combine all the ingredients together in a large mixing bowls, Use your hands to massage the ingredients together and work the salt and spices through everything,
Once combined, spoon the mixture into the jars and pack them down firmly with the cabbage leaves.
Fasten the lids loosely over the jars and set aside on the kitchen benchtop for 2 - 3 days to ferment.
Each day open the lids and to let off any gas which may be accumulating in the jar.
Store the kimchi in the fridge and enjoy as a condiment with whatever you fancy!
