Zaatar is a middle eastern spice mix made from thyme, sesame seeds, sumac and salt. It's pretty easy to source these days and is available from most good delis and greengrocers. Liguria Olives are petite olives which traditionally came from Liguria in Italy (near the French border.) They are allowed to ripen on the tree until they are brown, purplish or black.
Preheat the oven to 180C.
Coat both sides of the chicken in the zatar mix.
Pour the olive oil into a baking tray and place in the oven to heat up for 5 minutes.
Remove the tray from the oven and toss the cut vegetables and olives through the oil. Return to the oven for 25 minutes.
Heat a seasoned grill pan and sear the chicken for 2 - 3 minutes on both sides.
Transfer to a baking tray and place in the oven to cook through for 20 minutes.
Remove the vegetables from the oven and toss the spinach through until it wilts
Serve the chicken over the vegetables and pour any juice from the chicken over the top.
