A RAW recipe from Let's eat RAW by Scott Mathias (New Holland RRP $29.95)
Place a large food form on a white serving plate
(Note from Food Coach - we're not sure what that is but looking at the pic, it looks like a metal spring base ring)
Place the soaked chopped dates in bowl and mix with the almond meal and press into the base of the food form to the depth of 1 cm. Set aside.
Now in a food processor, chop the avocado and mix with sufficient lime juice to taste, without making the mixture too acidic and wet. Add the agave and spoon in the agar agar. The secret is NOT to make the mixture too wet or it won't set. Spoon the mixture into the food form, filling the edges and flatten the top.
Freeze for 1 - 2 hours, then leave at room temperature for 30 minutes. Run a knife around the edge of the form right down to the base and gently lift over the top. Top with berries of your choice.
