These are so easy and quick to make and, provided there are no nut allergies in the house, a simple healthier treat to give the kids when they get home from school.
Place all the ingredients in a food processor and process together to form a moist breadcrumb consistency.
Slowly add a tablespoon or two of cold water and process until the mixture clumps together.
Slightly dampen your hands and roll the mixture together into 16 small balls approximately 2 cm in diameter.
Roll the balls in extra coconut and place in the refrigerator to harden.
