The Hall Family - Apple growers Brothers Timothy and Bernard Hall are second generation Aussie Apple growers. Their parents, Fred and Pam, moved to Orange in 1974 and bought the "Bonny Glen" orchard. Bonny Glen Fruits has since grown to include four orchards in the Orange district and a state-ofthe art apple packing house that uses the latest technology. Bernard's wife Fiona is also actively involved in the sales and marketing of Bite Riot! - a brand the Halls created to market their premium apples from the Mount Canobolas area, a region boasting high altitudes and rich volcanic soil.
Place the cabbage, apple, onion and lemon rind and juice in
a large mixing bowl.
Place the creme fraiche and yoghurt in a small bowl. Using a wire
balloon whisk mix together well.
Add the creme fraiche dressing to the cabbage mixture and gently toss
until well combined. Season to taste with salt and pepper.
