New potatoes have a lower GI than large starchy potatoes used to roast and mash. The GI of this favourite vegetable can be lowered further by adding a vinaigrette dressing. Combined this with an onion and caper dressing and be comforted that while you enjoy the delicious flavour, your blood sugar levels will not go screaming through the roof.
Combine the onion, vinegar olive oil and capers together in a jar. Boil the potatoes until cooked (10 - 15 minutes).
Drain the potatoes thoroughly. Toss the dressing and parsley leaves over the potatoes, and serve.
Note: All onions belong to the allium family and are known to possess properties which prevent tumours in the stomach, liver and colon.
