To make the vinaigrette, whisk the last four ingredients (oil, verjuice, mustard and oil) in a bowl until emulsified. Season and stir through the walnuts.
Arrange the salad ingredients on a platter or large wide salad bone.
Drizzle with the vinaigrette and serve.
