This recipe is from Delia Smith's summer collection - she got it from someone else who got it from someone else and so on. It's extremely easy and delicious.
Preheat oven to 180 degrees Celsius.
Leaving the green stalk intact cut the peppers in half and remove all the seeds. Lay them out on a baking sheet lined with paper.
Cut the tomatoes into 4 and drop 2 pieces into each capsicum half. Cut the anchovies into small pieces and scatter them onto each half with even quantities of garlic shavings.
Finally, drizzle each one with a teaspoon of olive oil, some cracked black pepper and bake in the oven at 180C for 50 minutes to 1 hour.
Serve with fresh basil.
