Quinces are inedible raw but they are delicious cooked and sweetened naturally. In this recipe we use apple concentrate to sweeten.
They do take a while to cook but for the phenomenal taste, aroma and fibre, it's well worth the effort.
Preheat oven to 160°C fan forced
Boil water and stir into apple juice concentrate, and spices.
Pour the sweet liquid into a large ceramic baking dish
Cut quinces, one at a time, into 8 pieces. Remove cores and seeds. Place the quince, skin side facing up, into the liquid.
Place a sheet of baking paper directly over the quinces then cover with foil. Place in oven to bake for 2 ½ hours.
Remove spices from the quince and apple syrup.
Serve with Greek yoghurt
