A little crunchy haloumi croutons go a long way in this simple and delicious meal. Try to find the multi coloured heirloom tomatoes. Apart from being pretty they are bursting with flavour and contain multiple antioxidants.
Preheat the oven to 200 C
Toss the tomatoes in olive oil and mix through the oregano and garlic. Place on a roasting tray in the oven for 20 minutes.
Steam the beans for 4 minutes then refresh in ice cold water to retain their vibrant colour. Drain and blot dry.
Transfer the beans to a serving platter and arrange the tomatoes over the top.
Toss the haloumi in lemon juice and olive oil.
Fry in a non stick pan for approximately 5 minute until golden on all sides. Serve the crouton on the salad
Season with black pepper.
