This dense loaf is more like a sweet bread and tastes even better a few days old toasted and served with a soft goats cheese.
Preheat the oven to 180 degrees Celsius.
Grease and line a loaf tin.
Place the figs, pistachios, waters and honey in a pan and bring them to the boil. Simmer until the figs are soft and the liquid is a jam like consistency.
Combine the dry ingredients together in a bowl. In a small bowl, mix together the omega spread, eggs, vanilla and soy milk. Add the figs mix. Combine the wet with the dry ingredients.
Fill the loaf tin and place in the oven to bake for between 1 - 1 ¼ hours.
Note Omega spread is a non hydrogenated blend of Omega oils containing no trans fats. It's available from refrigerated sections of your health food store.
