The last time I was in Paris I ordered something from the menu without really knowing what it was. A small bowl of gazpachio arrived accompanied with a small bowl of rocket salad green and a fresh salad with finely chopped zucchini, bulgar and eggplant with vinaigrette. It was clean tasting, and delicious and inspired me to revisit a dish I always believed I disliked. If you are (as I was) put off by chunks of tomato in this chilled soup, you may enjoy this version processed through the juicer.
Juice the tomatoes through a juicer.
Place the juice in a food processor with the other ingredients and process until well combined.
Remove from the blender and refrigerate until you are ready to serve.
Allow a few hours before serving for the flavours to fully blend together.
Note: Men who suffer from gout may benefit from limiting consumption of tomatoes. The acidic properties of tomatoes may aggravate the condition.
