Preheat the oven to 180 Celcius
Heat the oil in a frying pan and add the zucchini to saute for 2 to 3 minutes. Sprinkle through the chopped mint and parsley.
Transfer to a lightly oiled ovenproof dish
Add the egg mixture and feta and season with cracked black pepper.
Place in the oven to cook through for 25 minutes
