Free Healthy Recipe - Robert's Biscuits

Low fat, Low GI, Low sugar

Robert was one of my clients and I'm rather proud to say a devoted fan of 'The Food Coach'. He raved about my services to all who would listen, and followed my suggestions to the letter. His Achilles heel was the need for a sweet biscuit with his cup of tea in the evening. He would experiment with baking on the weekends and even set his elderly mother to the task of inventing a healthy sweet biscuit with 'crunch'. To thank him for his support and friendship, I include his recipe in my book and on the site - and invite you to try Robert's biscuits.

Ingredients
1/3 cup honey
11/3 cups coarse oatmeal
½ tsp bicarb soda
1/3 cup dried apricots, very finely chopped
Method

Line a baking sheet with baking paper and preheat the oven to 160 degrees Celsius.

Gently heat the honey until it becomes very runny. In a food processor, mix together the oatmeal, flour, bicarb soda, apricots and almonds. Add the table spread and process until the mixture resembles breadcrumbs, then add the honey.
Mix briefly to form a firm dough then wrap in plastic and put in the freezer for 10-15 minutes.
Using a rolling pin and a floured board, quickly roll out the dough to 5mm in thickness and cut into biscuits about 5cm in diameter.
Bake for 15 minutes or until golden.
Store in an airtight container in the pantry.

Makes 30 servings (serve = 1 biscuit)
