Free Healthy Recipe - Stir Fried Aduki Bean Sprouts and Vegetables

Aduki beans are easier to digest than most beans due to a very low fat content. Slightly sweet flavour and in Chinese medicine they are used to strengthen the heart and spleen. The sprouts are used for blood in stools and to stop bleeding in pregnancy. They also taste good and make a satisfying substitute to meat in a stir fry. Some say that a diet of regular sprouts promotes great vitality, so if you are after an abundance of energy at an extremely low cost you may like to try this dish.

Ingredients
2 cloves garlic, chopped
1 red chilli seeded and chopped finely
½ red capsicum cut into julienne strips
1 large carrot cut into julienne strips
½ cm ginger, grated
2 tbsp tamari
1 tbsp mugi miso, made into smooth paste with 0.25 cup of water
½ tbsp olive oil
Method

Heat a wok with olive oil. Add the garlic, ginger, chilli and aduki bean sprouts, stir fry quickly for 20 seconds.
Add the tamari and stir for a further 2 minutes.
Add the carrots, broccoli and capsicum and stir through on a high heat for another 2-3 minutes.
Pour in the miso paste and stir through thoroughly for 2 minutes. Serve immediately.

Delicious with steamed quinoa.
