Party finger food is traditionally rich in carbohydrate, so these protein rich frittatas area welcome change.
A tip : Thoroughly oil your mini muffin pan so the frittatas slide out of the pan easily
Preheat oven to 160 degrees Celsius.
Beat the eggs and ricotta together.
Combine the shallots, dill, mint, smoked trout and season with black pepper. Pour the mixture into well greased mini muffin trays. Lay ½ a cherry tomato on the top of each frittata. Bake at 160C for 20 minutes.
Makes 20 servings (serve = 1 frittata)
