I would urge everyone to eat certified organic chicken only. The taste and texture is superior and the meat contains 58% less fat. Organic chicken is much healthier for you because they are fed diets free of chemicals and genetic modifications. Organic chickens live as nature intended, with fresh air and sunshine. They are not given any antibiotics or growth promotants and during processing no harmful chemicals or chlorines are used. They're preserved in salt and lemon juice so go easy on preserved lemons and don't add extra salt to any accompanying dishes. With these lemons a hint is better than an explosion of flavour in your mouth. The marinade works equally well with fish or even tofu. Combined with organic chicken as long as you can is delicious. It's relatively low in fat and delicious served with a plain green salad and BBQ'd sweetcorn.
Remove the pulp from the preserved lemon and discard. Add the preserved lemon rind to a food processor with the lemon juice, garlic, cumin, paprika, oil, pepper and coriander leaves and process until smooth.
Wipe the chicken breasts with damp paper towel to clean, then smear the marinade over each of them.
Set aside to marinate in the fridge for 1 - 2 hours.
BBQ on a hot oiled grill plate for 20 minutes.
Serve with green salad.
Note: Apartment dwellers can get a taste of outdoor eating by investing in an electric grill.
