For the less confident cooks out there wishing to impress, this one's for you. It's all about the presentation and nothing to do with the cooking. Served on beautiful white plates, the combination of colour and texture looks amazing. The meal itself is simple, clean, highly nutritious and very substantial.
Wipe the salmon with a damp paper towel and place in steamer. Cover and steam the salmon for 10 - 12 minutes.
Combine the tamari and mirin in a small bowl.
Bring a pan of water to the boil and add the soba. Boil for 4 minutes until tender then drain and rinse thoroughly under cold water. Toss the mirin and tamari sauce through the noodles. Divide the noodles into 4 bowls.
Steam the greens for 5 minutes making sure they still have some bite. Arrange the salmon fillet on top of the noodles and top with the salmon roe. Serve with the steamed greens and sesame seeds sprinkled on top.
Note: Salmon roe is a rich source of Omega 3 fatty acid the essential fats, known to be great for the heart and the mind.
