A lovely alternative to ice cream for those who can't tolerate dairy, or who just prefer a healthier dessert.
Remove the seeds and scoop the flesh from the papaya, in a food processor add the papaya, cashews, lime juice, vanilla, pear concentrate and maple syrup and process until smooth.
Remove from the bowl and spoon the mixture into a freezer proof container with a lid. Cover and freeze for 4 hours.
Remove from the freezer and return the iced cream to the processor. Process until smooth, return to the freezer and serve after a couple of hours.
Note : Some sensitive individuals may experience respiratory difficulties from papaya. For most of us papaya is an extremely healthy food with antibacterial and antifungal properties.
