Free Healthy Recipe - Smoked Salmon Sushi Cake

This dish definitely has the wow factor yet is so easy, even the kids can make them, although they may prefer tuna or chicken is popular in place of the salmon and salmon roe. Smoked salmon can also be substituted with sashimi salmon and a small spread of wasabi over the sushi rice to help clear the sinuses!

The Japanese believe a matching dinner set of 4 and 6 plates is unlucky so you can amuse your guests by serving 1 on an oddly matched plate.

Ingredients
100 grams smoked salmon, cut into thin strips
½ avocado cut into small cubes
100 grams daikon, cut into very small cubes
100 grams cucumber, cut into very small cubes
65 grams salmon roe
1 cup sushi rice, cooked (see recipe)
Method

Set aside 4 entrée plates. Place a 7 cm metal cutter on the first plate. Press a layer of sushi rice approx 1 cm thick inside the ring and smooth down to form a flat surface. Layer a thin smear of sushi jam on top of the rice. Next add a layer of smoked salmon and top with avocado. Combine the chopped daikon and cucumber and arrange it on top of the avocado. Top with a thin layer of salmon roe. Gently remove the ring and repeat the process to make 4 cakes. Drizzle with green tea vinaigrette and serve with pickled ginger.

Note: Daikon is a large white radish that grow up to 30cm long . The Chinese believe the daikon is a fat burner and helps to detoxify the liver. Available from Asian grocers.
