Parsley was reputed to have sprung from the blood of a Greek hero, Archemorus, and the leaves fabled to have been to fed by Greek warriors to their horses so make them run faster.
In this dish parsley is combined with rocket and mint to make fatoush another Middle Eastern dish. Fatoush is usually made with stale flat bread but for those with gluten intolerance, the sesame makes a delicious alternative. It's similar to tabouleh but, in my opinion, the combined herbs with sesame make a much more interesting and exciting salad. For taste and to preserve its high nutritional value use the freshest ingredients and make it as close to serving as possible. The vitamin C in the parsley and rocket is easily lost through oxidization at the cut leaf surface.
Set aside the sesame seeds. Combine all the salad ingredients in a bowl. Mix the dressing ingredients together and pour over the salad. Scatter the sesame seeds over the top of the salad and serve immediately.
