This recipe is supplied by our resident Traditional Chinese Medicine expert Kim Norton. Pickles are a great addition to the Spring menu, as the sour taste directly benefits the liver and gallbladder, getting the body in good working order for the season ahead.
Slice cucumbers thinly and place in a bowl.
Mix the other ingredients together and pour over. Let sit for 1 hour.
Mix in sesame seeds.
Serve with your meal or use in sandwiches.
Store in an airtight container in the fridge for up to a few days.
