There is no hard and fast rule about which greens you choose, but it's nice if you are making an Asian salad to select leaves with an exotic-sounding name (even if they are grown at the back of Bourke). Tatsoi is a sweet little leaf and looks pretty mixed with the hardier looking mizuna.
Wash and dry the salad greens in a salad spinner. String the snow peas and arrange all the greens on a platter. To make the dressing, mix the ingredients in a jar. Pour over the greens and serve immediately. You can make up the dressing in advance and keep it in a jar in the fridge.
