Free Healthy Recipe - Prawn rice paper rolls

Dairy free, Low fat, Low sugar

500 grams prawns, cooked, peeled and chopped
1 tbsp fish sauce
100 grams enoki mushrooms, (optional)
12 sheets rice paper

Soak vermicelli noodles in warm water for 10 minutes or until soft then drain well.

Finely chop noodles, shallots, prawns and mint and combine in a mixing bowl with fish sauce and lime juice. Soak rice paper in warm water until soft then drain and place onto a flat surface with two tablespoons of prawn mixture in the centre of each sheet. Partially roll, then top with a small amount of enoki mushroom and mint, then roll to enclose.

Serve with Coriander, Lime and Ginger Dipping sauce. (see recipe list)

Makes 12 servings (serve = 1 roll)
