Here's a good way to up your intake of veggies at lunch - pack them into a flan. For those who don't have time to make their own hummus, ensure you buy a natural brand free of artificial additives.
Preheat oven to 180 degrees Celsius.
Using 8 individual flans tins, prepare pastry as per the pastry instructions and bake for 15 - 20 minutes.
Place the eggplant, mushrooms, and zucchini on a baking tray. Drizzle with olive oil and season with sea salt and ground pepper. Place in the oven and cook for 20 minutes until the vegetables are tender but not overcooked. .
Fill the pastry shell with a spoonful of humus, drizzle with chili oil then top with the veggies. Cover with foil, and return the flan to the oven for a further 10 minutes.
Tip : Make bite size pastry cases in small muffin trays and serve these with drinks at a cocktail party.
