I would urge everyone to only eat certified organic chicken. The taste and texture is superior and the meat contains 58% less fat. They are not given any antibiotics or growth promotants and during processing no harmful chemicals or chlorines are used.
Preheat oven to 180 degrees Celsius.
Cut the chicken into strips approx 1 cm thick. Arrange them on a baking dish and cover with a layer of tomato and olive sauce. Cover with foil and bake for 20 - 25 minutes. Cook 1 cup quinoa in 1 cup salted water. Bring to the boil. Cover the pan and reduce to simmer and cook for 15 minutes until the water is completely absorbed and the quinoa is soft. Steam the English spinach for 3 minutes and serve immediately.
