Leeks are sweet with a delicate flavour. Often reserved only to make soup, leeks make a delicious side vegetable dish. They are related to onions and garlic, the group collectively known as the allium family. Medical studies have shown that countries with high leek consumption have a 60% reduction in the incidence of stomach cancer.
Wash the leeks and trim off the dark green leaves. Cut into pieces approx 9 cm long and then halve them down the length of each. Place in a steamer for 10 minutes. Serve as a side dish with walnut pesto over the top.
Note: To clean leeks, remove the dark green leaves. Slice down the length of the leek (don't cut all the way through). Place the cut end under cold running water, fanning out the leaves to ensure all the grit is removed.
