There are times when you feel you have to serve a dessert - particularly when guests are coming over for dinner. This one is very easy and, if you want to indulge your guests, it would be nice served with a sorbet icecream. Pineapple contains an enzyme called bromelain, which aids the digestive process. Make sure the pineapple is ripe and sweet, otherwise it can be too acidic and cause stomach pain.
Peel the pineapple, cut into chunks and put in the fridge to chill.
To make the salsa, combine the maple syrup and lime juice, then mix in the mint and coconut flakes. Spoon the salsa over the chilled pineapple.
