There's no need to feel obliged to make a pudding that has your guests groaning for the door. This dish has everything. It's sweet (naturally) looks beautiful, can be made in advance of your guest arriving and it's extremely good for you.
Remove the peel and pith from the orange and divide into segments. Remove the seeds from the pomegranates and in a bowl mix the two fruits together. Add the mint. Combine the rosewater with the pomegranate molasses and pour over the fruit and mint. Serve individual dishes with a scattering of dark chocolate shavings over the top of each.
Tip: To remove seeds, lightly score the skin from top to bottom. Peel back the skin, and remove the seeds from the bitter membrane with your fingers.
Chocolate shavings can be made using a potato peeler.
