Free Healthy Recipe - Prawn fish and macadamia cakes with minted yoghurt

Low carbohydrate, Low GI, Low sugar, Wheat Free

recipe developed by Eamon Sullivan, courtesy of Australian Macadamias

Ingredients
500 grams king prawns, raw
400 grams ling fillet, raw
100 grams macadamia nut, finely chopped
1 tbs green curry paste
1½ tbs mint, chopped
Method

Peel and devein the prawns. Chop the prawns and fish roughly. Combine in a food processor and blend until roughly chopped.
Transfer to a bowl and add the macadamias, onion, curry paste, lemon juice and coriander to the fish. Press the mixture together with your hands then divide into 8 and roll into patties.
Heat the oil in a non stick fry pan. Add 4 patties and cook on medium for 1 minutes on each side. Repeat with the remaining patties.
serve with combined mint and yoghurt.

Serve with accompanying steamed veggies or salad.
